Muffles? Waffins?

I did it! A Pintrest redo! I saw a Pintrest pin recently for brownies and cinnamon rolls made in a waffle iron. Genius. I've had a box of muffin sitting in my pantry for a few months, waiting, begging, to be made. But I have no oven. It's been on the blink for a few months. :/

So, I got out my Belgian waffle maker, mixed up the muffins (followed box directions), and crossed my fingers for the best. Then I made a simple glaze (powdered sugar, water, sprinkle of cinnamon) and served em up... Deelish!

The muffle! Or is it a waffin?

My {healthy} Rice Pudding

I'm on a kick. Health kick. Again... It's a cycle I go through. I love food and I do love healthy food, but it seems I just love food too much. Like most of us right?? Right? So a couple days ago I started planning (again) and eating (again) healthy meals. Aaand, looking at Pintrest. Yeah. Pintrest is NOT a good place to go if you're trying to eat healthy! :/ In my defense, I follow boards from the Undressed Skeleton, and she's got some fabu food ideas pinned up there!

I needed breakfast (dessert) ideas. Quick stuff. I love Greek yogurt with fruit and granola, but that can get boring after a while. So I looked and looked and looked... and created my own something special. Rice Pudding!

Here's what I used:

- Organic Brown Rice- cook a whole bunch and use it all week!
- Chia Seeds
- Cinnamon
- Raw Sugar
- Walnuts
-Fat Free Half & Half (FFHH)

Here's what I did:

Used about a cup of the rice, topped with chia seeds and cinnamon and put it in a Tupperware container in the fridge overnight. (This was my breakfast one day) Now chia seeds do a magical thing. They kinda plump up and add a wonderful "puddingness" to it all. Believe me. The next morning I added a bit of FFHH heated it up on the microwave and then mixed in a few walnut pieces and a bit of raw sugar. I don't measure things really so use as much or as little of this stuff as you'd like.  It was deelish!

Sunday Breakfast

Sunday Breakfast



I love making breakfast on the weekends for my family. I go all out, usually because it's our only time to relax together before the weekend flurry of activities begins. Plus I find cooking very relaxing- chopping, mixing, stirring... Ahhh. This morning I felt lazy and this is what they got...


I made biscuits, bacon (as my 10 year old son sniffed around chanting "bacon is a sometimes food, bacon is a sometimes food..."), cheesy grits and coffee. I also sliced up a gian tomato and red onion to eat with the grits. Sooo good!


My cheesy grits recipe:

Quick grits cooked according to package directions
4 slices American cheese
pepper

Yup! That easy. I follow the directions on the back of the canister and then add cheese at the very end and pepper to taste. Because of the cheese, you don't really need salt unless you're a salt freak like my boyfriend. Deelish!

*I don't particularly like American cheese, but with grits it's indispensible!

Aguas Frescas

Watermelon



I love aguas frescas- fruity drink with usually made of watermelon, cantaloupe, strawberries or pineapple. My favorite is watermelon. Here's how I make it! Mind you it's a recipe suggestion, so feel free to adjust as you like.

2 cups of watermelon*
4-6 cups of water*
1/2 cup sugar*
ice cubes

Blend the fruit, water and sugar in a blender until smooth. Chill or pour over ice!

**I have spearmint growing in my yard this year and I added some once. OMG! Delicious!

*use a seedless variety or leave the seeds- delicious either way.
*use more or less water depending on how juicy the watermelon is.
*add more or less sugar depending on how sweet your watermelon is.

I've also used strawberries, lemons, and limes in my mixture. Soooo good!

Coffee Creamers I Love

I love Coffee



I love coffee. Y'all that know me, know I have Starbucks just about every morning. At home I grind & brew Starbucks too. And at home only- not sure why, I use flavored coffee creamers. When I get my morning cup at Starbucks, it's usually a Grande Americano or the bold brew of the day, with half & half and almost 2 Splendas. Don't ask-- 1 is not enough and 2 is too sweet.
I love International Delight coffee creamers. My favorite ID creamers are the Coldstone Creamery Sweet Cream, Almond Joy, and Cinnabon. Yes they have those! Sooo good!!
